apple crunch coffee cake
The Casserole Queens Make-A Meal cookbook

1/2 tablespoon butter, for buttering the dish
2 cups all purpose flour, plus more for dusting
2 cups Golden Delicious apples, peeled, cored and chopped
2 cups sugar
1 cup vegetable oil
2 large eggs
2 teaspoons ground cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped walnuts or other nut {I used pecans}

Preheat the oven to 350 degrees. Butter and flour a 9 x 13-inch casserole dish. In a large bowl, combine the apples, flour, sugar, oil, eggs, cinnamon, baking powder, salt, and nuts and stir well. The batter will be thick. Spread the batter in the prepared casserole dish. Bake for 55 minutes, or until a toothpick inserted in the center of the cake comes out clean. Let cook for 5 minutes before serving. Store in a airtight container in the refrigerator for up to a week.
